- Caracterização de risco e de estado nutricionais e sua relação com a demência e qualidade de vida em mulheres seniores institucionalizadas: mudança de paradigma?Publication . Ávila, Maria José Fraga; Correia, Marta; Gomes, Ana Maria; Brandão, TeresaÉ sabido que a institucionalização de indivíduos seniores pode alterar o seu risco e estado nutricionais e comprometer a sua capacidade funcional, e a sua saúde física e mental frequentemente.Este estudo prospetivo observacional realizou-se num lar de idosos da Ilha Terceira, como parte integrante de um estudo mais abrangente, com início em janeiro de 2023, aprovado pela Comissão de Ética para a Saúde da Universidade Católica Portuguesa. A amostra é constituída por 33 utentes, às quais foram recolhidos/calculados dados de avaliação de risco e de estado nutricionais (dados antropométricos, MNA), de capacidade funcional e de risco de sarcopenia (SARC-F e dinamometria), dados clínicos e de saúde mental (MMSE), e qualidade e satisfação com a vida (WHOQOL-Bref; SWLS). Os dados foram tratados em IBM SPSS versão 23.Avaliaram-se 33 mulheres, cuja média de idades foi de 85±10 (65-100), com classificação por MNA de 63.7% (n=21) de mulheres em risco de desnutrição/desnutridas, e com valores de dinamometria inferiores ao percentil<10% de 75.8% (n=25). Dez-mulheres (30.3%) tiveram IMC sugestivo de magreza (<22 kg/m2); 30,3% (n=10) das mulheres pontuaram com pouca/ou nenhuma qualidade de vida e satisfação com a vida, mostrando associações positivas significativas com a dinamometria, o baixo IMC, um score mais baixo no MNA e um baixo MNSE e SARC-F, p<0.05. Os resultados mostram que as mulheres em risco nutricional e/ou desnutridas têm uma perceção da sua qualidade de vida e uma pontuação cognitiva mais baixa, associada a maior sarcopenia, e a pior estado nutricional. Apesar de todo o conhecimento e esforços mantém-se a necessidade de rastrear e intervir atempadamente nesta população

- Coping as a mediator and moderator between psychological distress and disordered eating behaviors and weight changes during the COVID-19 pandemicPublication . Machado, Bárbara Cesar; Moreira, Célia S.; Correia, Marta; Veiga, Elisa; Gonçalves, SóniaPrevious research has already shown the negative impact of the COVID-19 pandemic on college students’ well-being and mental health. Eating problems and weight gain due to changes in eating habits and physical activity experienced during this period have also been noticed. However, few studies have explored the role of students’ resources as used during the COVID-19 pandemic, such as coping strategies. This study aimed to (1) explore the associations among psychological distress, disordered eating, coping strategies, and weight changes; (2) examine the moderating role of coping strategies in the process of weight gain and weight loss; and (3) study the mediating role of coping strategies in the process of weight gain and weight loss. The participants in this study were 772 students at a Portuguese university. The data collected included sociodemographic data and three self-reported questionnaires (Depression, Anxiety, and Stress Scale; Eating Disorder Examination Questionnaire; Brief COPE) during the first few months of the pandemic, which included a 72-day full national lockdown. The results showed that depression, anxiety, stress, and disordered eating were related to increased weight. Guilt, denial, self-distraction, use of substances, and behavior disinvestment were also related to increased weight. Behavioral disinvestment had a strong mediating effect on weight gain. Additionally, planning, positive reframing, and acceptance all showed a moderating effect between psychological distress and weight changes. In conclusion, coping strategies allow for a better understanding of the mechanisms by which psychological distress and disordered eating were related to weight changes during the pandemic.

- Development of clean label bakery products with natural preservativesPublication . Simultaneously, the consumer profile and level of knowledge about the health-food relationship have shifted in recent years. Furthermore, the nutritional imbalance and high energy density of some formulations have increased the association of many bakery products with unbalanced dietary patterns and their link to metabolic syndrome and chronic non-communicable diseases (NCDs). In this sense, the aim of this work was to improve the nutritional and functional profiles of bakery products by developing a healthy product line designated "Healthyfat" and "Nutrihealthy," as well as to reduce the high number of synthetic additives in these products by developing a new line of"Clean Label" products in which preservatives, aromas, and synthetic dyes were replaced by natural alternatives that were multifunctional whenever possible.
- A dieta vegetariana e o aumento da força muscular e da massa muscularPublication . Correia, Marta; Dias, MarianaO termo “dieta vegetariana” define um padrão alimentar no qual há ausência de carne e pescado, sendo que a sua definição inclui vários subtipos. A Academy of Nutrition and Dietetics e a Direção-Geral da Saúde defendem que uma dieta vegetariana bem planeada é saudável e nutricionalmente adequada em todas as fases da vida do ser humano e em atletas, permitindo ainda benefícios na saúde, prevenção e tratamento de algumas doenças. O aumento de massa muscular, conhecido como hipertrofia, resulta de alterações no sistema musculoesquelético e adaptações neurológicas em resposta ao stress fisiológico provocado pelo treino de força. Contudo, a ingestão proteica parece desempenhar um papel crucial neste processo, condicionando o aumento de massa magra em casos de ingestão proteica inadequada. A importância da proteína vai para além da quantidade ingerida, devendo ser considerada a qualidade da mesma, isto é, o teor em aminoácidos essenciais (nomeadamente leucina), bem como a sua biodisponibilidade. O aporte energético total é outro dos fatores que assume um papel relevante, protegendo o tecido muscular de ser utilizado como recurso energético, e promovendo os fenómenos bioquímicos, energeticamente dispendiosos, na base da hipertrofia muscular. Os minerais ferro, zinco e cálcio bem como as vitaminas Cobalamina e Vitamina D, merecem especial atenção nos processos de crescimento muscular e do rendimento dos indivíduos num padrão vegetariano. Estes nutrientes melhoram a performance, participam no metabolismo proteico, contribuem para o desenvolvimento de força muscular e aumento da tolerância ao exercício e previnem anemias. A evidência parece ser sugestiva de que dietas vegetarianas podem ser opções viáveis em atletas, promover e fomentar a sua força, resistência e performance e, ao mesmo tempo, contribuir para o bem-estar ambiental e do indivíduo. Mais estudos, com desenhos experimentais mais bem definidos e mais precisos, são desejáveis, por forma a termos representatividade das amostras para a população específica em estudo.
- Evaluating e-health literacy, knowledge, attitude, and health online information in Portuguese university students: a cross-sectional studyPublication . Almeida, Sofia; Pinto, Elisabete; Correia, Marta; Veiga, Nélio; Almeida, ArmandoBackground: The main objective of the present study was to assess e-health literacy in a sample of Portuguese university students and its association with the level of knowledge and seeking for COVID-19-related information. Methods: This cross-sectional online study was conducted on Portuguese university students. All students completed a questionnaire consisting of demographic characteristics, e-health Literacy Scale (eHEALS), and a questionnaire about knowledge, attitude, and health online information seeking. Results: A total of 534 students (76.8% women), with a mean age of 24.3 years old (SD = 7.8), participated in this cross-sectional study, 53.0% of students were from non-health sciences. The mean score of eHEALS literacy was 28.8 (SD = 5.6). Most students (71.1%) classified the Internet as a useful, or very useful, tool in helping them make health related decisions. The use of the Internet as a tool to research health information for a period of two or more hours (OR = 1.9; CI 95% = 1.2; 3.4), to search online for health information on professional websites (OR = 2.3; CI 95% = 1.4; 3.6), to search in official media (OR = 2.3; CI 95% = 1.4; 3.9), and to study in the field of health sciences (OR = 1.6; CI 95% = 1.1; 2.6) increased the likelihood of having sufficient e-health literacy. Conclusion: From a public health perspective, there is a need to develop programs that increase health literacy among university students.
