P.In recent years, much attention has been given to dietary antioxidants, especially polyphenols. Several peptides derived from protein molecules have also been found to show antioxidant capacity along with other biological properties and thus there is an increasing interest in these compounds as health promoters. This review summarizes and discusses the main sources of antioxidative peptides with focus on food-derived peptides (animal, plant and marine sources), methods of preparation, antioxidant capacity evaluation as well as their proposed mechanisms of action. A discussion of the potential health effects and comments on the different applications for these antioxidants and their potential research interest are also subject of this review.

E.; Queiroga, R.O queijo coalho é considerado um patrimônio da população nordestina, produzido e consumido neste espaço geográfico e ultrapassa fronteiras. Caracterizado como típico produto brasileiro e com difundida comercialização, como também, marcado por impactar na formação de renda dos produtores. Assim, os queijos coalhos maturados produzidos com leite bovino, caprino e misto foram avaliados sensorialmente no 7º e 50º dia de armazenamento baseado no teste de Análise Descritiva Quantitativa (ADQ). As análises microbiológicas foram determinadas a fim de definir o controle sanitário das amostras, com base na legislação vigente e específica para o produto. Os atributos com relação à cor exterior central, aspecto, intensidade global, dureza, adesividade, granulosidade e persistência foram significativos. A avaliação sensorial dos queijos foi de grande valia na caracterização da qualidade do novo produto, descrevendo atributos importantes ao derivado lácteo frente a possível inserção mercadológica.
- Bifidobacterium spp. and Lactobacillus acidophilus: biological, biochemical, technological and therapeutical properties relevant for use as probioticsPublication . Gomes, Ana M. P.; Malcata, F. XavierThis review focuses on the biological properties and consequent technological roles of intestinal bacteria with potential health-promoting capacities, and provides selected examples available in the literature that are pertinent to the aforementioned concepts. A comprehensive overview pertaining to the taxonomy and ecology, as well as nutritional and health effects of Bifidobacterium spp. and Lactobacillus acidophilus, is provided; particular attention is paid to their incorporation, and growth and acidification features in fermented dairy products. The typical poor growth of these species in milk is highlighted, and the use of bifidogenic and growth factors, including their nature and function, is discussed. Efforts to establish optimum environmental conditions for their growth are critically reviewed, in addition to the effects of the food and storage conditions on microbial survival. Criteria for selection of effective microbial strains for their probiotic effect are listed, and modifications to improve fermentation efficiency and shelf-life of final dairy products are suggested; among these, the incorporation of Bifidobacterium spp. and L. acidophilus into a solid matrix, such as cheese, is emphasized.

P.; Duarte, Armando C.Sargassum muticum is an important source of bioactive polysaccharides; hence, high hydrostatic pressure (HHP) was used to improve their extraction efficiency. Response surface methodology and a Box-Behnken full factorial design were employed to assess and optimize the effects of extraction conditions on the yield, total sugars, total sulfated sugars and antioxidant activity of S. muticum extracts. The extraction yield ranged between 32 and 40.4% independently of the extraction conditions or seaweed solid/liquid ratio resulting in average increases of 3.6 to 4.8-fold for total sugars and sulfated sugars, as compared to conventional extraction. Extracts displayed improved antioxidant activities, yet maximum values were achieved under different optimum conditions of HHP processing, for example, 5–5.5 min, 300 MPa and 1 g of dry seaweed for yield. In conclusion, the optimal HHP technology conditions described in this paper enables to obtain enriched bioactive polysaccharide S. muticum extracts.

XavierWhey, a liquid by-product, is widely accepted to contain many valuable constituents. These include especially proteins that posses important nutritional and biological properties – particularly with regard to promotion of health, as well as prevention of diseases and health conditions. Antimicrobial and antiviral actions, immune system stimulation, anticarcinogenic activity and other metabolic features have indeed been associated with such whey proteins, as a-lactalbumin, b-lactoglobulin, lactoferrin, lactoperoxidase, and bovine serum albumin. The most important advances reported to date pertaining to biological properties of whey proteins are reviewed in this communication.
- Caprine cheese with probiotic strains: the effects of ripening temperature and relative humidity on proteolysis and lipolysisPublication . Gomes, Ana M. P.; Silva, M. Luz P. C.; Malcata, F. XavierThe effects of ripening temperature, relative humidity and time on chemical and textural characteristics of a ‘probiotic’ goat’s milk cheese were examined. The experimental layout followed a 23 factorial design, with all possible combinations of 5 7C and 10 7C (ripening temperature), 85% and 95% (ripening relative humidity) and 1 day and 70 days (ripening time). All proteolytic indices measured (water-soluble nitrogen, trichloroacetic acid-soluble nitrogen and phosphotungstic acid-soluble nitrogen) were enhanced with increased ripening temperature to a greater extent than with increased ripening relative humidity; the increase in phosphotungstic acid-soluble nitrogen was the most significant. Free fatty acid concentrations in cheeses were not influenced by ripening relative humidity but increased with ripening temperature and time. A higher ripening temperature and a lower relative humidity gave rise to firmer cheeses. Postulated empirical models have provided a good fit to the experimental data set generated; such models were able to predict a decrease of 25 days in ripening time with no impairment of either proteolytic or lipolytic indices if a cheese were to be ripened at 10 7C (rather than 5 7C) and 95% relative humidity.
