Nos últimos anos, o tema da sustentabilidade tem sido abordado como uma preocupação crescente, o que tem levado a uma maior ponderação dos efeitos nefastos causados pelas práticas de consumo e produção atuais. Esta dissertação tem como objetivo analisar a capacidade de cooperativas de consumo em fomentar práticas sustentáveis em meios urbanos, passando pela influência dos padrões de consumo dos cidadãos. A redução do desperdício alimentar é uma componente de sustentabilidade relevante para o estudo, pretendendo investigar que papel podem desempenhar estas entidades na sua mitigação. Desenvolvemos um estudo de caso sobre a cooperativa de consumo Fruta Feia, que pretende a redução do desperdício alimentar por motivos estéticos. O estudo foi realizado através de entrevistas semi-diretivas a trabalhadores e consumidores da cooperativa e de um inquérito por questionário, que contou com a participação de 108 associados. Assim, foi adotada uma abordagem mista, incluindo uma vertente qualitativa e quantitativa. Os dados recolhidos permitiram concluir a existência de diversos benefícios aliados ao desenvolvimento sustentável, derivados da atuação de cooperativas de consumo, podendo representar contributos valiosos para as comunidades locais e para a sociedade como um todo.
In recent years, the issue of sustainability has become a growing concern, which has led to greater consideration of the harmful effects caused by current consumption and production practices. The dissertation aims to analyze the capacity of consumer cooperatives to promote sustainable practices in urban environments, through the influence of citizens' consumption patterns. Reducing food waste is a relevant component of sustainability for the study, which aims to investigate what role these entities can play in mitigating it. A case study was carried out on the Fruta Feia consumer cooperative, which aims to reduce food waste for aesthetic reasons. The study was conducted through semi-structured interviews with the cooperative's workers and consumers and through a questionnaire survey involving 108 members. Thus, a mixed approach was adopted, including a qualitative and quantitative approach. The collected data led to the conclusion that there are several benefits to sustainable development derived from the actions of consumer cooperatives, which can represent valuable contributions to local communities and society as a whole.
