- Trust the process : analysing the effects of AI-based recruitment processes on the perception of divers jobseekersPublication . Graßmann, Lilly Fiona Ira; Esteves, Francisco GomesThis dissertation investigates the impact of AI-assisted recruitment processes on candidates' job preferences and perceived fairness, focusing on individuals prone to discrimination due to non-native appearances or names. AI technologies promise to reduce biases inherent in human-led recruitment processes, which often result in discriminatory practices based on ethnicity, gender, or name origin. Through a web-based survey of 259 participants, this research evaluates the trust candidates place in AI versus human recruiters, their likelihood to apply to companies using AI, and their perception of organizational commitment to diversity. The results show that individuals with non-native names or appearances trust AI-assisted processes more than traditional ones and are more likely to apply to organizations that utilize AI in recruitment processes. These findings highlight AI’s potential to promote fairness and inclusivity in recruitment, however they also call attention to the need for ethical oversight to prevent new forms of bias encoded in AI systems. This research contributes to understanding the role of AI in fostering diversity and offers practical implications for organizations seeking to integrate AI into their hiring practices.
- Clean label approaches in cheese production: where are we?Publication . Fernandes, Jaime; Gomes, Sandra; Reboredo, Fernando H.; Pintado, Manuela E.; Amaral, Olga; Dias, João; Alvarenga, NunoThe Clean Label concept has gained significant traction in the cheese industry due to consumer preferences for minimally processed cheeses free from synthetic additives. This review explores different approaches for applying Clean Label principles to the cheese industry while maintaining food safety, sensory quality, and shelf life. Non-thermal technologies, such as high-pressure processing (HPP), pulsed electric fields (PEF), ultra-violet (UV), and visible light (VL), are among the most promising methods that effectively control microbial growth while preserving the nutritional and functional properties of cheese. Protective cultures, postbiotics, and bacteriophages represent microbiological strategies that are natural alternatives to conventional preservatives. Another efficient approach involves plant extracts, which contribute to microbial control, and enhance cheese functionality and potential health benefits. Edible coatings, either alone or combined with other methods, also show promising applications. Despite these advantages, several challenges persist: higher costs of production and technical limitations, possible shorter shelf-life, and regulatory challenges, such as the absence of standardized Clean Label definitions and compliance complexities. Further research is needed to develop and refine Clean Label formulations, especially regarding bioactive peptides, sustainable packaging, and advanced microbial control techniques. Addressing these challenges will be essential for expanding Clean Label cheese availability while ensuring product quality and maintaining consumer acceptance.
- The paradox of print : salted books and the revival of physical independent bookshops in a digital agePublication . Gouveia, Maria Benedita Martins Homem de; Moura, Joana Oliveira de Almeida BacelarThis dissertation explores the symbiotic relationship between digital platforms and independent bookshops, focusing on Salted Books, a newly established English-language bookshop in Lisbon, Portugal. Through an in-depth analysis of Salted Books’ Instagram strategy and its impact on the physical bookshop experience, this research investigates how independent bookshops can leverage social media to enhance their physical presence and foster community engagement in the digital age. Employing a mixed-methods approach, including interviews, participant observation, customer surveys, and social media analysis, the study applies theoretical frameworks such as Third Place theory, Convergence Culture, and Social Media Affordances. The research reveals that Salted Books has effectively created a seamless integration between its physical space and digital presence, using Instagram to extend the bookshop experience beyond its physical boundaries. This strategy has not only driven foot traffic but also fostered a vibrant online community of book lovers. The findings contribute to ongoing dialogues about the role of physical spaces in the digital world and provide insights for independent bookshops and cultural institutions facing similar challenges.
