Abstract(s)
O presente estudo teve como objetivo fazer um levantamento acerca da fileira da carne de caça de ungulados na Região do Vale do Guadiana: concelhos de Alcoutim, Almodôvar, Barrancos, Mértola, Moura, Odemira, Ourique e Serpa.
O método utilizado foi o de estudos de caso. Numa primeira fase foram recolhidos dados secundários junto de algumas das entidades de maior relevo no setor da caça. Posteriormente, foram efetuadas 4 entrevistas a agentes com conhecimento da realidade da caça naquela região e ainda 2 questionários, um deles a gestor de uma ZC e o outro a uma empresa espanhola de comercialização e transformação de carne de caça.
Como ferramentas para a análise de dados foi elaborada uma cadeia de valor, de modo a compreendermos a conjuntura atual do setor da caça. Foi feita uma estimativa do valor económico da carne das espécies cinegéticas abatidas contabilizadas pelo ICNF entre as épocas venatórias de 2009/10 e 2014/2015, e finalmente foi feita uma análise SWOT a uma possível criação de uma central de transformação e comercialização de carne de caça na região.
A carne de caça proveniente das zonas de caça da região é maioritariamente vendida às empresas espanholas e transformada pelas mesmas, devido à ausência de uma central de transformação na região em estudo. Posteriormente, a carne é maioritariamente exportada um pouco por toda a Europa, com especial incidência na Alemanha, onde são grandes consumidores de veado. A transformação foi identificada como a atividade onde se assiste à maior valorização económica da carne ao longo da fileira, embora esta fase da cadeia de valor se localize geograficamente fora da fronteira Portuguesa, o que seria em grande parte ser evitado pela existência de unidades de abate e transformação em território na região em estudo. Concluiu-se ainda, com base na análise SWOT pelo interesse, e sob determinadas condições viabilidade, da criação de uma Central de Abate e Transformação de carne de caça de ungulados na Região.
The present study had as objective to make a survey about the line of game meat of ungulates in the Region of the Valley of the Guadiana: counties of Alcoutim, Almodôvar, Barrancos, Mértola, Moura, Odemira, Ourique and Serpa. The method used was that of case studies. In the first phase, secondary data were collected from some of the most important entities in the hunting sector. Subsequently, 4 interviews were carried out with agents with knowledge of the reality of hunting in that region and also 2 questionnaires, one of them the manager of one ZC and the other to a Spanish company of commercialization and transformation of game meat. As tools for data analysis, a value chain was elaborated to understand the current conjuncture of the hunting industry. An estimate was made of the economic value of the meat of slaughtered game species accounted for by the ICNF between the 2009/10 and 2014/2015 season seasons, and finally a SWOT analysis was carried out on a possible establishment of a meat processing and marketing hunting in the region. Hunting meat from the region's hunting areas is mostly sold to and processed by Spanish companies because of the absence of a processing plant in the region under study. Subsequently, the meat is mostly exported a little throughout Europe, with a special focus on Germany, where they are large consumers of deer. The transformation was identified as the activity where the highest economic value of meat is observed along the row, although this phase of the value chain is located geographically outside the Portuguese border, which would be largely avoided by the existence of slaughter units and transformation into territory in the study region. It was also concluded, based on the SWOT analysis for the interest, and under certain conditions, feasibility, of the creation of a Center for Slaughter and Transformation of game meat of ungulates in the Region.
