A Organização Mundial da Saúde identificou a contaminação alimentar intencional como uma das principais ameaças à saúde pública no século XXI, cujos impactos podem assumir proporções consideráveis na saúde dos consumidores, sociedade, economia, política e segurança nacional. A temática Food Defense é relativamente recente em Portugal e a sua implementação têm-se concentrado em empresa detentoras de referenciais suportados pela Global Food Safety Initiative. O presente trabalho consistiu em implementar um sistema Food Defense na plataforma logística da Maia da empresa Sogenave S.A. com objetivo de assegurar a autenticidade dos seus produtos, melhorar a resiliência da organização à Food Fraud e outras formas de ataque bem como proteger a reputação da organização, produtos, instalações e população em geral. Para tal, foi adotada a metodologia Threat Assessment Critical Control Points - TACCP, descrita no documento PAS96:2014 da British Standards Institution. A implementação do sistema Food Defense na plataforma da Maia compreendeu um diagnóstico avançado quanto às medidas de segurança e defesa amplamente estabelecidas - estratégias de mitigação, definição de ações para as lacunas identificadas no diagnostico, identificação de ameaças e vulnerabilidades que a organização, operação e produtos enfrentam, bem como a identificação das “prioridades” e respetivas medidas de vigilância. A Sogenave Maia apresenta 10 “prioridades”, inseridas nas grandes ameaças da “Contaminação maliciosa”, “Operações realizadas de forma negligente e intencional” e “Transporte a temperaturas inadequadas deliberadamente”. O presente trabalho deu o seu contributo para evolução da empresa Sogenave, munindo a organização de recursos para uma maior proteção e autenticidade dos seus produtos e reputação em geral, pela minimização das possibilidades de um ataque ou, quando já decorrido, atenuação dos seus impactos, oferecendo também a possibilitar de alcançar novos clientes e/ou mercados.
The World Health Organization has identified intentional food contamination as one of the major threats to public health in the 21st century, whose impact poses a serious threat to consumer health, society, economy, politics and national security. The Food Defense theme is relatively recent in Portugal and its implementation has been concentrated in companies with references supported by the Global Food Safety Initiative. The present work concerns the implementation of a Food Defense system in the Maia Logistics Platform of the company Sogenave SA to ensure the authenticity of its products, improve the organization's resilience to Food Fraud, to other forms of attack and to protect the organization's reputation, products, facilities, and the general population. To this end, the TACCP methodology - Threat Assessment Critical Control Points, described in document PAS96: 2014 of the British Standards Institution was adopted. The implementation of the Food Defense system on the Maia platform consists on an advanced diagnosis of widely established security and defense measures - mitigation strategies, definition of actions, identification of threats and vulnerabilities to the organization, operation and products, as well as the identification of "priorities" and their surveillance measures. Sogenave Maia established 10 "priorities", in three major areas "Malicious Contamination", "Undermine operations " and "Deliberate transport to inappropriate temperatures." The present work contributed to the evolution of the company Sogenave, providing the organization with resources for greater protection and authenticity of its products and to safeguard its reputation by minimizing the possibilities of an attack, mitigating the effects of an attack, and allowing the organization to reach new customers and markets.
