Desde o início da sua existência que o Homem tem vindo a procurar, através de desenvolvimentos tecnológicos, aperfeiçoar técnicas e procedimentos de modo a alcançar uma melhor satisfação das suas necessidades. Assim, a otimização de recursos e o aumento de qualidade estão no foco da inovação tecnológica, pois são a chave para a competitividade de muitas empresas. Este estudo foi desenvolvido com o intuito de compreender de que modo é que a adoção de tecnologia permite às empresas produtoras de vinho em Portugal reduzirem o desperdício no seu processo de produção, e aumentarem o valor dos produtos que oferecem ao mercado. Como base ao trabalho foi elaborada uma revisão de literatura sobre a temática do estudo. De seguida, foi conduzido um estudo qualitativo e exploratório através de 26 entrevistas com representantes de empresas produtoras de vinho de diferentes dimensões, variedade de produtos e preço médio, de várias regiões vitivinícolas de Portugal Continental. Deste modo, foi possível obter dados interessantes, a tecnologia é relevante na redução do desperdício. Contudo, há umas tecnologias que estão bastante difundidas e implementadas e outras que não são tão utilizadas. As razões que levam os decisores a adotarem, ou não, a tecnologia prendem-se com motivos vários como a escala, a cultura, a visão da empresa e ainda a perceção do impacte económico do uso das mesmas, salientando que, na maioria das vezes, o fator económico é o que mais preponderante se revela. Conclui-se que as tecnologias possibilitam às empresas oferecer produtos de maior valor e também são um grande aliado na redução de desperdício, aumentando assim a competitividade das mesmas.
Since the beginning of its existence, humans have been seeking to improve techniques and procedures through technological developments in order to better satisfy their needs. Thus, resource optimization and increased quality are at the center of technological innovation, as they are the key to the competitiveness of many companies. This work was developed with the aim of understanding how the adoption of technology allows wine-producing companies in Portugal to reduce waste in their production process and increase the value of the products they offer to the market. As a basis for the study, a literature review was conducted on the theme. Next, a qualitative and exploratory study was conducted through 26 interviews with representatives of wine-producing companies of different sizes, product varieties, and average prices, from various wine regions of mainland Portugal. In this way, interesting data was obtained. Technology is relevant in reducing waste. However, some technologies are widely diffused and implemented, while others are not as commonly used. The reasons why decision-makers adopt, or do not adopt, technology are related to diverse motives such as scale, culture, the company's vision, and the perception of the economic impact of their use, noting that most of the time the economic factor is the most preponderant one. In conclusion, technologies enable companies to offer higher-value products and are also a great ally in reducing waste, thus, increasing their competitiveness.
