| dc.description.abstract | O presente relatĆ³rio visa descrever as atividades realizadas durante o perĆodo de estĆ”gio, integrado no 3Āŗ semestre do mestrado em Biotecnologia e InovaĆ§Ć£o da Universidade CatĆ³lica Portuguesa (UCP), que decorreu no Departamento da Qualidade do Super Bock Group (SBG), entre os meses de maio de 2022 e fevereiro de 2023. Pretende-se, com este relatĆ³rio, descrever as atividades realizadas durante este perĆodo, bem como apresentar os resultados obtidos e elencar as principais aprendizagens, competĆŖncias e conhecimentos adquiridos atravĆ©s desta experiĆŖncia. O SBG Ć© a maior empresa portuguesa de bebidas refrescantes, cujo core business assenta no negĆ³cio das cervejas e Ć”guas engarrafadas. Para alĆ©m da sua forte presenƧa no mercado nacional, a sua estratĆ©gia multimarca e multimercado chega a mais de 50 paĆses. O principal objetivo do presente estĆ”gio foi a implementaĆ§Ć£o das auditorias de higiene āISC hygiene and 5S auditsā, que tiveram como objetivo classificar e melhorar o estado atual de higiene das linhas de enchimento do SBG. Para tal, comeƧou-se por fazer um diagnĆ³stico inicial Ć s linhas de enchimento, o qual permitiu concluir que os problemas de higiene mais prevalentes nas linhas de enchimento do SBG sĆ£o a presenƧa de vidro, biofilmes, sujidade, pĆ³ e teias de aranha, nos equipamentos e/ou infraestruturas. Assim que os colaboradores do enchimento receberam formaĆ§Ć£o na Checklist de Higiene e que as auditorias de higiene arrancaram, foi calculado um Indicador de Higiene, com o objetivo de posicionar, em termos de higiene, o SBG em relaĆ§Ć£o Ć s outras fĆ”bricas detidas pela Carlsberg. Os resultados encontrados no primeiro diagnĆ³stico feito Ć s linhas de enchimento foram coincidentes com os resultados das Auditorias de Higiene, revelando que as maiores falhas de higiene no enchimento sĆ£o a presenƧa de vidro, biofilmes, sujidade, pĆ³ e teias de aranha. Os resultados destas auditorias tambĆ©m confirmam que as linhas que apresentam mais problemas de higiene sĆ£o as linhas de enchimento de cerveja em garrafa, comparativamente com as linhas de enchimento de cerveja em barril. Ć, portanto, fundamental continuar a sensibilizar os tĆ©cnicos das respetivas Ć”reas para as questƵes relacionadas com a higiene e seguranƧa alimentar, por exemplo, atravĆ©s de formaƧƵes e/ou palestras que abordem a importĆ¢ncia da higiene numa indĆŗstria alimentar. Para alĆ©m disso, deve ser feita uma revisĆ£o dos Planos de Limpeza em vigor, sugerindo-se que seja encurtado o seu intervalo de tempo em alguns dos equipamentos ou mesmo alterados alguns dos utensĆlios/produtos de limpeza que sĆ£o utilizados durante estes procedimentos de limpeza, que poderĆ£o, eventualmente, nĆ£o ser os mais adequados. | pt_PT |
| dc.description.abstract | This report aims to describe the activities conducted during the internship, as part of the third semester of the masterās in Biotechnology and Innovation at Universidade CatĆ³lica Portuguesa (UCP), which took place at the Quality Department of Super Bock Group (SBG), between the months of May 2022 and February 2023. The aim of this report is to describe the activities carried out during this period, as well as to present the results obtained and list the main lessons, skills and knowledge acquired through this experience. SBG is the largest Portuguese company of refreshing beverages, whose core business is based on the beer and bottled water business. In addition to its strong presence in the national market, its multi-brand and multi-market strategy reaches over 50 countries. The main objective of this internship was the implementation of the hygiene audits "ISC hygiene and 5S audits", which aimed to classify and improve the current state of hygiene of the SBG filling lines. Therefore, an initial diagnosis of the filling lines was conducted, which led to the conclusion that the most prevalent hygiene problems in the SBG filling lines are the presence of glass, biofilms, dirt, dust and cobwebs in the equipment and/or infrastructures. As soon as the filling hall employees were trained on the checklist template and the hygiene audits started, the Hygiene Indicator was calculated, with the aim of positioning, in terms of hygiene, SBG comparing to the other factories owned by Carlsberg. The results found in the first diagnosis coincided with the results of the Hygiene Audits, revealing that the biggest hygiene gaps in filling are the presence of glass, biofilms, dirt, dust and cobwebs. The results of these audits also confirmed that the filling lines that present the most hygiene problems are bottled beer filling lines compared to cask beer filling lines. It is, therefore, essential to continue raising the awareness of technicians in the respective areas to issues related to hygiene and food safety, for example, through training and/or lectures that address the importance of hygiene in a food industry. In addition, a review of the Cleaning Plans in force should be conducted, in order to shorten the time interval for some of the equipment, or even change some of the utensils/cleaning products that are used during these cleaning procedures, which may not be the most suitable. | pt_PT |
