Abstract(s)
O presente relatório de estágio realizado no Super Bock Group teve como principal objetivo a elaboração de documentação técnica para duas unidades de produção de cerveja distintas da empresa, a Browers Beato e a Instalação Piloto da Equipa de I&D e Inovação, com o intuito de contribuir para o controlo e garantia de qualidade destas unidades. Este relatório está dividido em três capítulos principais. O primeiro aborda a motivação e objetivos do estágio, a metodologia de trabalho adotada e uma breve introdução às unidades onde decorreram as atividades. O segundo capítulo apresenta alguns conceitos teóricos relacionados com a produção de cerveja e o controlo e garantia de qualidade. O terceiro descreve detalhadamente todas as atividades desenvolvidas ao longo do estágio, destacando o seu propósito, e salientando o conhecimento adquirido com a sua execução. O relatório termina com uma análise crítica e as conclusões gerais. Alguns dos documentos desenvolvidos encontram-se na íntegra em anexos. Ao longo do estágio foram desenvolvidos seis manuais técnicos, sete instruções de trabalho, sete procedimentos operacionais standard e um documento complementar de valores padrão de referência. O conhecimento para a elaboração destes documentos foi adquirido por meio de uma observação sistemática dos processos produtivos, da execução prática de determinadas tarefas e de um contacto regular com a equipa responsável, permitindo que o seu conteúdo seja pormenorizado e reflita a realidade operacional. Foram ainda desenvolvidas atividades nas áreas de I&D e Inovação, Qualidade e Análise Sensorial, que enriqueceram significativamente a experiência de estágio. Assim, considera-se que os objetivos definidos para o estágio foram alcançados, uma vez que a documentação elaborada contribui de forma significativa para a padronização e conformidade dos processos de produção de cerveja, em alinhamento com as boas práticas e com os requisitos de controlo e garantia de qualidade. A partir do capítulo três, o conteúdo do relatório não está disponível para consulta pública por motivos de confidencialidade, estando acessível apenas para a instituição de ensino para fins de avaliação académica no âmbito da conclusão do mestrado.
This internship report, carried out at Super Bock Group, has as its main objective the development of technical documentation for two distinct beer production units within the company: Browers Beato and the Pilot Plant of the R&D and Innovation Team, aiming to support quality control and assurance in these facilities. The report is structured into three main chapters. The first presents the motivation and objectives of the internship, the adopted working methodology, and a brief introduction to the units where the activities took place. The second chapter outlines theoretical concepts related to beer production and quality control and assurance. The third chapter provides a detailed description of all activities undertaken during the internship, highlighting their purpose and the knowledge acquired through their execution. The report concludes with a critical analysis and general conclusions. Complete versions of some of the documents developed are included in the appendices. Over the course of the internship, six technical manuals, seven work instructions, seven standard operating procedures, and one supplementary reference values document were developed. The knowledge required for the preparation of these documents was acquired through systematic observation of production processes, practical execution of certain tasks, and regular interaction with the responsible team, ensuring that the content produced is detailed and accurately reflects operational reality. Additional activities were also carried out in the areas of R&D and Innovation, Quality and Sensory Analysis, which further enriched the internship experience. Therefore, it is considered that the objectives defined at the beginning of the internship were successfully achieved, as the developed documentation significantly contributed to the standardization and completion of beer production processes, in the line with good practices and the company’s quality control and assurance requirements. From chapter three onwards, the content od the report is not available for public consultation due to confidentiality reasons, being accessible only to the academic institution for evaluation purposes related to the completion of the master’s degree.
