Atualmente, o consumidor está cada vez mais consciente e exigente relativamente à segurança alimentar, requisitando uma maior transparência nos produtos alimentares. Em simultâneo, a globalização e a acelerada evolução tecnológica conduziram a que o setor agroalimentar enfrente elevados níveis de competitividade nacional e internacional. No sentido de dar resposta às exigências do consumidor e de se manter competitiva no mercado, as empresas do setor agroalimentar Português reconhecem o impacto significativo das TIC (Tecnologias da Informação e Comunicação) no desenvolvimento da sua empresa. São então participantes ativos, na quarta revolução industrial, que está a provocar uma profunda transformação digital em todos os setores. O foco da indústria 4.0 é a total digitalização dos ativos físicos e na sua integração em ecossistemas digitais com os diversos fornecedores da cadeia de valor. Uma das soluções mais adequadas à indústria transformadora, são os sistemas Manufacturing Execution System. Estes sistemas de informação permitem uma maior rapidez e robustez na tomada de decisões, e consequentes ganhos em competitividade. O FLOW Manufacturing é um software de gestão de produção industrial e de qualidade (sistema MES), que suporta as várias etapas de produção, logística, qualidade, rastreabilidade e requisitos legais/normativos, tudo em tempo real, através da integração de equipamentos, de dispositivos em chão de fábrica e com o sistema integrado de gestão da empresa - ERPs (Enterprise Resource Planning). Neste estágio, o objetivo global compreendeu conhecer e obter formação sobre o software FLOW M e as suas principais funcionalidades, bem como o domínio dos processos de implementação e de integração do software com os sistemas ERPs, aplicado ao setor agroalimentar em específico à indústria de transformação e congelação de pescado. A estratégia adotada para cumprir os objetivos delineados em termos de formação consistiu na realização de parametrizações no FLOW M para implementação e integração em diversos clientes, com diferentes contextos industriais, desde indústria de embalagens plásticas para indústria alimentar, indústria de lacticínios, indústria de transformação de frutas/legumes, indústria de panificação, indústria de ração animal até à indústria de transformação e congelação de pescado, bem como a participação em reuniões com os clientes, sobre os diferentes projetos de implementação. O caso de estudo apresentado neste relatório decorre do projeto de implementação e integração do FLOW M na Mar Cabo Ltd., empresa da indústria de transformação e congelação de pescado. Para este projeto foi analisado o fluxo produtivo da empresa e adaptado ao FLOW M, onde foram criados processos de receção, processos produtivos e processos de qualidade. Em simultâneo, foram desmaterializados diversos documentos das áreas da qualidade, da logística e da produção da empresa para o FLOW M e foram também definidos os pontos críticos de controlo já identificados no HACCP da empresa.
Currently, consumers are increasingly aware and demanding of food safety, demanding greater transparency in food products. At the same time, globalization accelerated the technological developments that have led to the agri-food sector achieving elevated levels of national and international competitiveness. To meet consumer demands and remain competitive in the market, companies in the Portuguese agri-food sector recognize the significant impact of ICT (Information and Communication Technologies) on the development of their company. Turning them then active participants, in the fourth industrial revolution, which is causing a profound digital transformation in all sectors. Industry 4.0 focuses on the total digitalization of physical assets and their integration into digital ecosystems with various suppliers in the value chain. One of the most suitable solutions for the manufacturing industry is the Manufacturing Execution System. These information systems allow for faster and more robust decision-making and consequent gains in competitiveness. FLOW Manufacturing is an industrial production and quality management software (MES system), which ensures production management in all stages of production, planning, quality, traceability, and legal/regulatory requirements, all in real-time, through the integration of equipment, devices on the shop floor and with the company's integrated management system - ERPs (Enterprise Resource Planning). In this traineeship, the overall objective was to know and obtain training on FLOW M software and its main functionalities, as well as the knowledge of the processes of implementation and integration of the software with ERPs systems, applied to the agri-food sector to the fish processing and freezing industry. The strategy adopted to meet the objectives outlined in terms of training consisted of parameterizations in FLOW M for implementation and integration in several customers, with different industrial contexts, from the plastic packaging industry to the food industry, dairy industry, fruit/vegetable processing industry, bakery industry, industry from animal feed to the fish processing and freezing industry, as well as participation in meetings with customers, on the different implementation projects. The case study presented in this report stems from the project of implementation and integration of FLOW M in Mar Cabo Ltd., a company in the fish processing and freezing industry. In this project, it was defined the production flow of the company and adapted to FLOW M, where reception processes, production processes and quality processes were created. At the same time, several documents from the quality, planning and production areas of the company for FLOW M were dematerialized and the critical control points already identified in the company's HACCP were also defined. The objectives of training and professional development were achieved, as well as the objectives outlined for the implementation and integration project of Mar Cabo.
