Com cerca de 160 anos, ultrapassados os períodos de intempéries e com uma grande evolução, a indústria conserveira em Portugal é umas das indústrias com mais sucesso. A globalização permitiu, não só uma elevada aceleração na internacionalização das indústrias conserveiras que, atualmente, exportam acima de 50% da sua produção, mas também um maior reconhecimento dos produtos portugueses pelo Mundo.
A empresa Conservas Portugal Norte (CPN) aposta na inovação, que aliada à qualidade, garante a titularidade de vários certificados, e um reconhecimento elevado em vários mercados. O mercado americano é um mercado que interage com a empresa há cerca de 35 anos, e a procura de produtos portugueses tem vindo a aumentar. Dado que é um mercado diferente do Europeu, é essencial estar informado e consciente de todas as regras que são regularmente alteradas, em particular aquelas que regem os registos de exportação, fornecidos pela Food and Drug Administratin (FDA). O presente relatório de estágio descreve o trabalho realizado durante o estágio curricular na empresa Conservas Portugal Norte. Este relatório assenta em duas partes: uma primeira parte relativamente às várias tarefas diárias realizadas no departamento de qualidade da empresa, que permitiram adquirir um maior conhecimento da indústria alimentar, nomeadamente, das práticas laboratoriais em contexto fabril e da importância da segurança alimentar na indústria conserveira. Recentemente, a legislação da FDA para importação foi alterada, que preconiza a alteração na informação nutricional dos rótulos dos produtos importados. Numa segunda parte, pretendeu-se adequar a rotulagem dos produtos da empresa já exportados para os Estados Unidos da América para a nova rotulagem proposta, através de um levantamento bibliográfico acerca da legislação FDA. Concluiu-se que relativamente aos rótulos anteriores, nos novos rótulos deverão constar: informações acerca da Vitamina D e Potássio (K) presentes no produto, destaque para tamanho de cada porção e calorias, informação acerca de açúcares adicionados e uma nota informativa acerca do significado das percentagens de valores diários. Os resultados deste estudo permitiram uma reformulação nos rótulos de três produtos da CPN, nomeadamente nas conservas de sardinha em azeite 120g, atum em óleo 785g e filetes de cavala em azeite 120g. Estas alterações têm como objetivo criar um maior impacto no consumidor para que este faça escolhas que vão de encontro às suas necessidades e preferências.
With, approximately 160 years, after the difficult periods and with a great evolution, the canning industry in Portugal is one of the industries with more success. Globalization has enable, not only a high acceleration in the internationalization of the canning industry, that currently export more than 50% of their production, but also a greater recognition of portuguese products throughout the world. Conservas Portugal Norte (CPN) invests in innovation, which allied with quality, guarantees the ownership of several certificates, and a high level of recognition in several markets. The American market interacts with the company around 35 years and its demand in portuguese products has been increasing. Since it is a different market from the European, it is essential to be informed and aware of all the rules that are regularly changed, particularly those governing export records, provided by the Food and Drug Administration (FDA). This report describes the work developed during the internship at Conservas Portugal Norte. It is divided into two parts: a first part describing all the daily activities made in the quality department. Those activities improved the knowledge in the canning industry, more precisely in laboratory practices in a factory context and the importance of food safety in the canning industry. Recently, the FDA import legislation has been changed, which advocates changes in the nutritional information of imported product labels. In the second part, it was intended to adjust the labeling of the company’s products already exported to the United States of America, for the proposed new labeling, through a bibliographic survey on FDA legislation. It was concluded that for the previous labels, the new labels should include: information about the Vitamin D and potassium (K) present in the product, highlight for serving size and calories, information about the added sugars and an information note on the meaning of percentages of daily values. The results of this study led to a reformulation of the labels of three CPN products: sardines in olive oil 120g, tuna in oil 785g, and fillets of mackerel in olive oil 120g. These changes aim to create a greater impact on the consumer so that they can make choices that meet their needs and preferences.
