- Update on the role of antiseptics in the management of chronic wounds with critical colonisation and/or biofilmPublication . Alves, Paulo J.; Barreto, Ruben T.; Barrois, Brigitte M.; Gryson, Luc G.; Meaume, Sylvie; Monstrey, Stan J.Biofilms play a major role in delaying chronic wounds from healing. A wound infiltrated with biofilm, or “critically colonised” wound, may become clinically infected if the number of microbes exceeds a critical level. Chronic wound biofilms represent a significant treatment challenge by demonstrating recalcitrance towards antimicrobial agents. However, a “window of opportunity” may exist after wound debridement when biofilms are more susceptible to topical antiseptics. Here, we discuss the role of antiseptics in the management of chronic wounds and biofilm, focusing on povidone-iodine (PVP-I) in comparison with two commonly used antiseptics: polyhexanide (PHMB) and silver. This article is based on the literature reviewed during a focus group meeting on antiseptics in wound care and biofilm management, and on a PubMed search conducted in March 2020. Compared with PHMB and silver, PVP-I has a broader spectrum of antimicrobial activity, potent antibiofilm efficacy, no acquired bacterial resistance or cross-resistance, low cytotoxicity, good tolerability, and an ability to promote wound healing. PVP-I represents a viable therapeutic option in wound care and biofilm management, with the potential to treat biofilm-infiltrated, critically colonised wounds. We propose a practical algorithm to guide the management of chronic, non-healing wounds due to critical colonisation or biofilm, using PVP-I.
- The potential of an “app” that facilitates smartphone exploration in the classroomPublication . Veiga, Francisco; Andrade, AntónioToday we are living difficult times due to the pandemic situation we are facing, schools reinvent themselves daily and “finally” reach to technology to get to the student, whether through a simple but sometimes complex videoconference or a myriad of other applications that always depend on the knowledge and skills of each teacher in the technical field and in the pedagogical acuity of adapting the resource to the training purpose. Simulators, games and robots, among other resources, which will culminate in the integration of Artificial Intelligence in education, are at an advanced stage of incorporation of technology, but there are intermediate phases with potential that are important to disseminate so as to be explored. Often considered a distractor, the smartphone does, however, play an important role in learning. Always available with internet access, it allows information search, collaborative work, image, video, sound, games, virtual and/or augmented reality, among other potentialities. It can better motivate and involve students in their learning process and in the development of transversal skills such as creativity, communication, cooperation and critical thinking. Despite the numerous apps available, it is difficult to identify those that are appropriate for teaching and learning, in any particular topic in each subject. Thus, in November 2019, we provided our teachers with a repertoire of apps, through an application developed by us that allowed them to discover, install, try and use them, in the context of the classroom. At the same time, they can evaluate them and share with the community examples of good practices in their use. This study seeks to identify the effective use given to this app in its different features by the teaching community. The satisfaction recognised by the teaching community regarding this resource brings together the relevant factors that allow the dynamic evolution of this project.
- Non-compliant fruit as new functional food ingredientsPublication . Vilas-Boas, Ana A.; Gómez-García, Ricardo; Campos, Débora A.; Oliveira, Ana; Pintado, ManuelaOver the last decade, the high amount of food waste has received increased attention towards a more sustainable future, such as reducing food losses and valorize food by-products. Non-compliant fruit represents a significant part of fruit losses during production as a result of aesthetic requirements (color, low size, and deformations in the shape of the products). These fruits do not match commercialization standards when sold as fresh fruit. Selling this kind of fruit at a cheap price might have a great impact on the reduction of fruit loss, nevertheless, this option does not offer a long-time solution, being required an alternative and sustainable approach. These fruits represent a rich source of bioactive compounds (phenolic compounds and dietary fiber) that could be used as new functional ingredients/products. The production of new functional ingredients/products from non-compliant fruit consists of a valuable and sustainable approach for taking advantage of these food losses. Therefore, the purpose of this chapter is to provide an overview of new strategies to recover from non-compliant fruit value-added ingredients, impacting society, environment, and economy.
- Effect of high pressure pre-treatment on raw ewes’ milk and on subsequently produced cheese throughout ripeningPublication . Inácio, Rita S.; Pinto, Carlos A.; Saraiva, Jorge A.; Gomes, Ana M. P.BACKGROUND: Raw ewe’s milk, used to manufacture Serra da Estrela Protected Designation of Origin (PDO) cheese, was pre-treated by high pressure processing (HPP), using previously optimized conditions (121 MPa/30 min), in order to evaluate its effect on milk technological properties for subsequent cheese production, namely the impact on resulting curd, whey, and cheese throughout ripening. RESULTS: The cheese yield increase 10.4% as a result of milk pre-treated by HPP, which also yielded inactivation of beneficial microbial groups. After 60 days of ripening, both treated and control cheeses showed neither significant differences (P ≥ 0.05) in quantified microbial load nor in basic physicochemical quality parameters. CONCLUSION: HPP seems to be a promising non-thermal treatment for ewes’ milk to inactivate contaminant bacteria yet with no negative effect on lactic acid bacteria, which are very important for the unique characteristics of Serra da Estrela cheese.

- Undergraduate nursing students’ competencies in disaster scenarios: from educational needs to curricula regulationPublication . Santos, Paulo Alexandre Figueiredo dos; Rabiais, Isabel Cristina Mascarenhas; Berenguer, Sílvia Maria Alves Caldeira; Amendoeira, José Joaquim PenedosBackground: Nurses play a central role in disaster preparedness, so appropriate disaster-related education is essential. However, almost all Portuguese undergraduate nursing curricula do not address disaster situations. Objective: To understand nursing schools’ contribution to developing undergraduate students’ knowledge and skills in disaster scenarios and the existing constraints on integrating this content into undergraduate nursing curricula. Methodology: A qualitative study with methodological triangulation, including interviews and focus group, was carried out to explore the perceptions of 35 nurse teachers and 6 nurses with experience in health care provision in disaster scenarios, about integrating disaster-related content into nursing curricula. Results: The study reveals that disaster management and preparedness should be integrated into undergraduate nursing education to guarantee the effective development and more objective regulation of students’ skills in this area. Conclusion: Portuguese nursing schools need to promote and develop undergraduate training in disaster preparedness and a more inclusive and objective regulation of this area.
- Democracy crises and social imaginariesPublication . Lóia, LuísNational State seems to be a key concept to understand modern political life and many scholars have been devoting their attention to it. On the one hand, they intend to demonstrate that we are witnessing a failure of National States to provide the needed answers to modern claims that nowadays can only be solved at international levels. On the other hand, National States seem to be the only type of social organization through which, especially in democratic regimes, people become effective in shaping the kind of world they aim to live in. Taking into due account this problematic view, our aim is to show that both approaches are real and need to be understood in their interconnected realms. As a classic formulation puts it, there has never been a more appropriate time to affirm that we are citizens of the world, but citizenship is, at its core and in its most significant meaning, a political and national status given by some form of organized political society. How can these different spheres of participation in political life be conciliated? How can these different claims, but with the same sources, be satisfied? How may we understand the national drives towards populism and authoritarianism in several National States with the appeal of a democracy policy with a suitable moral background that may provide a "good life"? Those are some questions we intend to address in this paper.
- Characterization of a lactiplantibacillus plantarum r23 isolated from arugula by whole-genome sequencing and its bacteriocin production abilityPublication . Barbosa, Joana; Albano, Helena; Silva, Beatriz; Almeida, Maria Helena; Nogueira, Teresa; Teixeira, PaulaLactiplantibacillus plantarum is one of the lactic acid bacteria species most used as probiotics and starter cultures in food production. Bacteriocin-producers Lpb. plantarum are also promising natural food preservatives. This study aimed to characterize Lpb. plantarum R23 and its bacteriocins (R23 bacteriocins). The genome sequence of Lpb. plantarum R23 was obtained by whole-genome sequencing (WGS) in an Illumina NovaSeq platform. The activity of Lpb. plantarum R23-produced bacteriocin against two Listeria monocytogenes strains (L7946 and L7947) was evaluated, and its molecular size was determined by tricine-SDS-PAGE. No virulence or antibiotic resistance genes were detected. Four 100% identical proteins to the class II bacteriocins (Plantaricin E, Plantaricin F, Pedi-ocin PA-1 (Pediocin AcH), and Coagulin A) were found by WGS analysis. The small (<6.5 kDa) R23 bacteriocins were stable at different pH values (ranging from 2 to 8), temperatures (between 4 and 100 °C), detergents (all, except Triton X-100 and Triton X-114 at 0.01 g/mL), and enzymes (catalase and α-amylase), did not adsorb to the producer cells, had a bacteriostatic mode of action and their maximum activity (AU/mL = 12,800) against two L. monocytogenes strains occurred between 15 and 21 h of Lpb. plantarum R23 growth. Lactiplantibacillus plantarum R23 showed to be a promising bio-preservative culture because, besides being safe, it produces a stable bacteriocin or bacteriocins (har-bors genes encoding for the production of four) inhibiting pathogens as L. monocytogenes. Further studies in different food matrices are required to confirm this hypothesis and its suitability as a future starter culture.
- Does symptom recognition improve self-care in patients with heart failure? A pilot study randomised controlled trialPublication . Sousa, Joana Pereira; Neves, Hugo; Pais-Vieira, MiguelPatients with heart failure have difficulty in self-care management, as daily monitoring and recognition of symptoms do not readily trigger an action to avoid hospital admissions. The purpose of this study was to understand the impact of a nurse-led complex intervention on symptom recognition and fluid restriction. A latent growth model was designed to estimate the longitudinal effect of a nursing-led complex intervention on self-care management and quality-of-life changes in patients with heart failure and assessed by a pilot study performed on sixty-three patients (33 control, 30 intervention). Patients in the control group had a higher risk of hospitalisation (IRR 11.36; p < 0.001) and emergency admission (IRR 4.24; p < 0.001) at three-months follow-up. Analysis of the time scores demonstrated that the intervention group had a clear improvement in self-care behaviours (beta Slope. Assignment_group = -0.881; p < 0.001) and in the quality of life (beta Slope. Assignment_group = 1.739; p < 0.001). This study supports that a nurse-led programme on symptom recognition and fluid restriction can positively impact self-care behaviours and quality of life in patients with heart failure.
