- Spent brewer's yeast (saccharomyces cerevisiae) as a potential source of bioactive peptides: an overviewPublication . Oliveira, Ana Sofia; Ferreira, Carlos; Pereira, Joana Odila; Pintado, Manuela E.; Carvalho, Ana P.Bioactive peptides become popular in several economic sectors over the years as they have demonstrated important biological benefits in digestive, immune, cardiovascular, and nervous human systems. Although many commercial peptides are chemically synthesized, they can also be obtained from natural protein sources such as spent brewer's yeast (Saccharomyces cerevisiae). The recovery of this fermentation by-product for production of functional ingredients is an important step in the increasingly demand to implement and promote a circular economy-based industry. Bioactive peptides can be found in protein-rich extracts produced from S. cerevisiae, and several studies have described their positive impact of human body. In this line, the present review highlights and discuss the reported biological properties of S. cerevisiae bioactive peptides in terms of antihypertensive, antioxidant and antimicrobial effects, although other bioactivities are also described. Concerning the growing interest in yeast protein-rich products by agri-food and cosmetic sectors, some of the products currently on the market are also pointed out and their potential source is discussed.
- Eco-conscious consumerism in Portugal : an analysis on green consumer behaviourPublication . Sá, Raquel Sofia Maroco de; Duarte, António Alexandre de OliveiraThis dissertation aims to explore the profile of the green consumer in Portugal, the factors that influence their purchase, the main obstacles companies and consumers face when purchasing and the concerns both parties have towards the theme in analysis. The focus is to understand the profile of the green consumer in Portugal, their behaviour, the level of concern towards the environment, if the ecologically conscious consumer behaviour in Portugal diverges regarding demographic variables (gender, age, education, occupation and income level). To understand this relationship, topics such as green consumerism, the aspects influencing consumer buying behaviour and green marketing strategies were analysed. Additionally, the main obstacles consumers face, their attitude towards the subject and other concepts such as greenwashing were also analysed. Findings reveal that nowadays there is a positive change in the perceptions that consumers have about sustainable products regarding trust, quality and performance. It also proved that there is a positive impact regarding the perceived trust towards the product and the influence it has on willingness to pay and purchase intention of sustainable products. Moreover, in the presence of eco-labels, consumers’ willingness to pay for green products is not higher than without its presence, although they have a significant direct impact on consumers’ willingness to pay. Additionally, products that last longer and possibilities money saving have a direct impact on green purchase intention.
- The new words kids hear from translated picturebooksPublication . Araújo, Luísa; Leite, Sara; Brito, Rita; Esteves, SandrinaThis study shows how the language in translated picturebooks is enriched by the use of rare words. We document how the translation of picturebooks from English to Portuguese results in the use of rare words in Portuguese. Evidence indicates that children learn new vocabulary through readings of picturebooks (Noble et al., 2019) and that translators make choices that contribute to the use of rare words (Ketola, 2018). The sample of 86 picturebooks was selected from a list recommended by the Portuguese national reading plan for 3-5-year-olds. The identification of rare words was done using a frequency analysis in both Portuguese, using ESCOLEX, and English, using the ChildFreq tool. Findings indicate that translated picturebooks use rich and varied lexicon and include an average of 6.6 rare words. Twenty-two percent of these words originate from literal and non-literal translations and are not rare in the original texts. This indicates that the process of translation contributes to increasing children's exposure to rare words.
